Mash bill
A blend of several whiskeys, so no single grain split.
Corn, rye, malted barley and wheat, from two mash bills combined in a proportion that is not published. One bill is 60% corn, 20% rye and 20% malted barley; the other is 51% corn, 20% rye, 20% malted barley and 9% wheat. The Huber family grows the corn, rye and wheat on its own farm, non-GMO, and buys the malted barley locally. Both are sweet mashes, fermented seven days in closed-top stainless steel.
- Cask
- New charred American oak, then custom toasted oak (finishing)
- Finish
- Six months in toasted American, French and Hungarian oak
Why it's craft
The finish here comes from a custom toasted-oak profile that combines American, French and Hungarian oak, designed by the distillery to add sweetness and depth. The bourbon underneath is its own, made from corn, rye and wheat the Huber family grows on the farm, fermented as a sweet mash and distilled on copper pot stills. It is a limited release bottled without chill filtration. The family has farmed in Starlight, Indiana, since 1843.
