“Estate-grown rye on a sweet mash, named for the rye casks found in the Huber farm's oldest rickhouse.”
Tasting notes
- nose
- cherry and cherry cola, fennel, spearmint and vanilla over punchy rye grain
- palate
- silky and thick; lemon and orange oil with cinnamon and vanilla, then light anise, fresh oak and rye spice
- finish
- medium and dry; galangal, pink peppercorn and allspice, with honey and a fleeting caramel as the spice tapers
Mash bill
A blend of several whiskeys, so no single grain split.
Rye and malted barley, blended from two recipes in a proportion that is not published. One recipe is 80% rye and 20% malted barley, the other 90% rye and 10% malted barley, and neither uses corn, so the rye grain sets the flavor. The Huber family grows the rye on its own farm and buys the malted barley locally from Glick Farms. Both are sweet mashes, fermented for seven days in closed-top stainless steel.
- Cask
- New American oak

Why it's craft
The Huber family grows the rye for this whiskey on its own farm in southern Indiana, ferments it as a sweet mash, distills it twice on a pot still and ages the barrels in rickhouses on the same land. The name comes from the profile of rye casks the family found in the estate's oldest rickhouse. Greg and Ted Huber founded Starlight Distillery on the farm in 2001, and the family still owns and runs it.
