“One estate barrel at a time, uncut: vanilla, caramel and dark cherry from a sweet-mash pot still.”
Tasting notes
- nose
- Caramelized sugar, vanilla and apple with toasted oak, dried fruit and baking spice
- palate
- Vanilla and caramel with pepper, dark cherry and dark chocolate
- finish
- Long and warming; cinnamon and lingering oak spice with a trace of sweetness
Mash bill
A blend of several whiskeys, so no single grain split.
Corn, rye, malted barley and wheat from the distillery's two mash bills: 60% corn, 20% rye and 20% malted barley, and 51% corn, 20% rye, 20% malted barley and 9% wheat. Each bottle comes from one barrel, so it carries the house style rather than a fixed blend. The Huber family grows the corn, rye and wheat on its own farm, non-GMO, and buys the malted barley locally.
- Cask
- New charred American oak
Why it's craft
Each bottle is a single barrel picked by the distillery and bottled uncut at cask strength, so the strength and flavor shift from barrel to barrel. The whiskey is made from corn, rye and wheat the Huber family grows on its own farm in Starlight, Indiana, fermented as a sweet mash and distilled on copper pot stills. The barrels age in rickhouses on the same land, and the family has farmed there since Simon Huber settled in 1843.
