“Australian malt matured in fortified-wine casks and kept as a solera, so raisin, fig and toffee run through every bottling.”
Tasting notes

- palate
- caramel chews and crème brûlée with ripe banana, figs, a touch of nougat and sweet spice
- finish
- full and juicy; raisins and figs hold on, then a little oak and a dry spice that lingers
Mash bill
- Malted barley100%
100% malted barley. The barley is Australian, in keeping with Starward's rule of sourcing every ingredient from within a day's drive of its Port Melbourne distillery. It is fermented with brewers' yeast, which the distillery uses for a bolder flavour in the new spirit.

- Apera (Australian fortified wine) barrels, recoopered and charred
Why it's craft
Solera ages Starward's Australian single malt in Apera barrels, casks that held Australia's sherry-style fortified wine, most of them from McWilliams Winery on the Victoria and New South Wales border. Starward reshapes and chars many of these casks itself and blends young casks into older whisky in a solera, the method sherry bodegas use. Founder David Vitale distills in Port Melbourne, where swings of temperature within a single day push the spirit in and out of the wood quickly, and he took back full ownership of the company in 2026.
