Starward put Melbourne on the whisky map with New World maturation in Australian wine barrels. Founded in the late 2000s and later navigating investment and a founder-led buyback chapter, its story is climate + local wine casks: double-grain and malt expressions that taste of fruit and vineyard oak rather than imitation Scotland.
