“An eight-year bonded bourbon of white corn and Texas rye, built to taste like fall.”
Tasting notes
- nose
- warm carrot cake, baked plum and dark fruit preserves, toasted pumpernickel and burnt-sugar caramel candy
- palate
- ripe peach, grapefruit zest and pink peppercorn over concentrated dried fig
- finish
- orange creamsicle and clove spice, softening into wildflower honey and gentle oak
Mash bill
- White corn70%
- Rye25%
- Malted barley5%
70% white corn, 25% rye, 5% malted barley. All of it is Texas grain, grown mainly by Lonestar Family Farms in North and West Texas, with Brasetto rye and Wildfire malted barley alongside the white corn. Still Austin chose the high share of rye and the white corn to capture fall: the rye for crisp autumn air, the corn for the fields.
- Cask
- New American oak, toasted then level 3 char
Why it's craft
This fall release spent eight years aging in Texas heat, a year longer than the 2025 edition; barrels there can swing more than 50 degrees in a day and lose up to 15% to evaporation in the first year. Still Austin mills, mashes, ferments and distills all of its whiskey in Austin from Texas-grown grain, on a column still built for it in Scotland. The company is independent and employee-owned.
