“The maple-barrel bourbon at full strength, buttery and slow to warm.”
Tasting notes
- nose
- maple syrup, butterscotch and vanilla with a line of oak
- palate
- buttery and earthy-sweet, like a maple cookie, with caramel and vanilla up front and maple deepening at the back against older oak
- finish
- long and buttery; maple lingers as pepper builds slowly, drying to old oak
Mash bill
- Corn70%
- Rye25%
- Malted barley5%
70% corn, 25% rye, 5% malted barley. Taconic has not published a separate recipe for this release; this is the rye-forward New York-grain recipe used for its maple bourbon. The maple character comes from the finishing barrels, not the grain.
- Cask
- New charred American oak, then used bourbon barrels that held maple syrup
- Finish
- Maple syrup barrel finish (barrels that aged Catskill Mountain Sugarhouse maple syrup)
Why it's craft
This is Taconic's maple-barrel bourbon left at barrel strength, released once a year. The barrels make a round trip: emptied of bourbon in Stanfordville, filled with organic Grade A syrup at Catskill Mountain Sugarhouse, then refilled with bourbon, so the maple is drawn from the wood. The Coughlin family's farm distillery mashes, distills, ages and bottles the whiskey itself, using New York-grown grain and spring water from the farm.
