- maple syrup and vanilla, with spearmint, orange peel, lemon zest and cinnamon candy over bread pudding
- palate
- creamy; maple and caramel, spiced apple, chocolate-covered almonds and vanilla frosting, with white pepper and a slightly tannic grip
- finish
- chocolate returns alongside blackberry jam and licorice, ending on a peppery note
Mash bill
- Corn70%
- Rye25%
- Malted barley5%
70% corn, 25% rye, 5% malted barley. This is Taconic's rye-forward bourbon recipe, made from New York-grown grain. The maple is not in the mash at all: it comes later, from barrels that held New York Grade A organic maple syrup.
- Cask
- New charred American oak, then used bourbon barrels that held maple syrup
- Finish
- Maple syrup barrel finish (barrels that aged Catskill Mountain Sugarhouse maple syrup)

Why it's craft
The maple comes from a barrel exchange with a New York maple producer: Taconic's freshly emptied bourbon barrels go to Catskill Mountain Sugarhouse to age organic Grade A syrup, and once the syrup is bottled the same barrels come back to Stanfordville and are filled with bourbon again. Taconic is a family-owned farm distillery that mashes, distills and ages its whiskey on the Coughlins' farm in Dutchess County.
