Tasting notes
- nose
- brown sugar, toffee and caramel, with cinnamon, dried orange peel, clove and toasted oak
- palate
- brown sugar and vanilla, then a wave of black pepper over dark honey and baked apple
- finish
- long; dark chocolate settles under clove, mint and sweet oak as a peppery tingle fades
Mash bill
- Rye95%
- Barley5%
95% rye, 5% barley. It is the same high-rye recipe as Taconic's Founder's Rye, with only a small share of barley alongside New York-grown rye. Taconic distills below 160 proof to keep more of the grain's flavor in the spirit.
- Cask
- New charred American oak, Independent Stave Cooper's Select, #3 char, 53 gallon
Why it's craft
Fox and Hare is one barrel of Taconic's oldest rye, bottled without chill filtration at the strength it was picked. The rye is grown in New York and mashed, distilled, aged and bottled on the Coughlin family's farm in Stanfordville, where the distillery opened in 2013 and later added a Vendome column still and its own bottling line. The foxhound on Taconic's labels is the family dog, Copper, a nod to the foxhounds Prohibition-era bootleggers kept to warn them of approaching agents.
