“A bourbon house's all-barley whiskey, built on roasted specialty malts and new oak.”
Tasting notes
- nose
- honeyed malt and toasted oak with baked apple, dried fig and black licorice, plus a bready, beer-like brightness and a wisp of smoke
- palate
- spicy malt and pepper over creamy oak, with chocolate, brown sugar, dried orange, clove and roasted coffee
- finish
- short to medium and dry; the pepper eases as roasted malt and nuts come forward, ending on light smoke
Mash bill
- Malted barley100%
100% malted barley. Taconic makes it from New York-grown grain and uses a mix of specialty malts, which the distillery credits for the whiskey's chocolate, pastry and nut notes; it has not published which malts or barley varieties go in.
- Cask
- New charred American oak, Independent Stave Cooper's Select, #3 char, 53 gallon
Why it's craft
Taconic is known for bourbon and rye, and this is its single malt: all malted barley from New York-grown grain, aged in new charred oak. Like the rest of the range it is mashed, distilled, aged and bottled at the Coughlin family's farm distillery in Stanfordville, with water from the farm's own spring. The family opened the distillery in 2013 under New York's farm distillery license.
