- allspice and red wine over caramel, toffee and peanut brittle, with plum, raspberry and grape skin
- palate
- caramel and vanilla with bananas foster, then cherry skins, raisins, red grape and blackberry cobbler
- finish
- long; soft maraschino cherry and cocoa-laden oak, turning tannic while the fruit lingers

Why it's craft
Taconic takes its own six-year Dutchess Private Reserve, distilled on its farm in Stanfordville, and moves it into used Napa Cabernet casks for half a year, which pushes it toward red fruit and cocoa. The base whiskey starts from New York-grown grain the family distilled itself. Paul and Carol Ann Coughlin founded the distillery in 2013 and the family still owns it.
