“A straight wheat whiskey built on roasted chocolate and caramel wheat, which pull it toward cocoa and maple.”

Tasting notes

nose
milk chocolate and darker cocoa, then caramel, dark maple syrup and a bready whole-grain note
palate
light and soft; warm baking spice and charred oak tannin, then caramel, cocoa and a hint of molasses
finish
medium; caramel and chocolate linger as the sweetness falls away, leaving a drier close with a touch of oak tannin

Mash bill

  • Organic red wheat75%
  • Caramel wheat5%
  • Chocolate wheat5%
  • Malted barley15%

75% organic red wheat, 5% caramel wheat, 5% chocolate wheat, 15% malted barley. Red wheat carries most of the recipe and gives a hearty whole-wheat grain flavor. The two roasted specialty wheats are the unusual part: chocolate wheat brings deep roast notes and caramel wheat adds bready, molasses-like sweetness. Like all of Tamworth's grain, it comes from farms within about 150 miles of the distillery.

Why it's craft

Wheat makes up 85% of this mash, and two of the three wheats are roasted specialty grains of the kind brewers use, chocolate and caramel, alongside organic red wheat. It was Tamworth's second aged whiskey, released in spring 2017, and it is mashed, distilled and aged at the distillery in Tamworth Village. The name honors William Whipple, New Hampshire's signer of the Declaration of Independence.
