Steven Grasse, the brand creator behind Hendrick's Gin and Sailor Jerry Rum, founded Tamworth Distilling & Mercantile in 2015 in Tamworth Village, at the edge of New Hampshire's White Mountains. He built it as an experimental test kitchen, drawing on the area's farming and transcendentalist history. The distillery makes its spirits from organic corn, rye, wheat and malt grown on farms within about 150 miles, using a 250-gallon Vendome copper still and a rotary evaporator that captures flavor from fresh botanicals. Its whiskey rests in a timber-framed barrel house built from wood cut within 10 miles, which runs without electricity or fossil fuels. Beside its straight rye and wheat whiskeys it is known for oddities such as Crab Trapper, a bourbon made with invasive green crabs in partnership with the University of New Hampshire. Grasse still owns and leads the distillery.
