57% corn, 32% wheat, 11% barley. The corn is yellow No. 1 and the wheat is grown in Texas, both bought as heirloom grain from Barton Springs Mill in Dripping Springs. Wheat takes the place of rye as the second grain, and Treaty Oak says the recipe is built for balance and a soft texture.

Why it's craft
This is the house's everyday bourbon, and even at this price it is distilled in Dripping Springs rather than bought from a Kentucky distillery, carrying the Texas Whiskey Association's Certified Texas Whiskey mark. Treaty Oak was founded in 2006 as the fourth distillery established in Texas, and it mills, mashes, ferments, distills, ages and bottles under one roof. Its barrels rest in Hill Country heat, which the distillery says speeds maturation.
