- Malted barley100%
100% malted barley. Virginia Distillery Co. stores Midwest-grown, Midwest-malted barley in two 36-ton bins on site and mills it on a 1920s Boby mill. The wash it ferments is close to an unhopped beer of about 8% alcohol, which then goes to the copper pot stills.

Why it's craft
Cabernet Cask Select finishes the house single malt in red wine barrels that held Cabernet, including Cabernet Sauvignon casks from France and from California. Virginia Distillery Co. distills the malt itself on Scottish-made copper pot stills, with a spirit safe built in Scotland for the cuts, and ages it at least four years in first-fill bourbon barrels before the finish. Established in Lovingston in 2011, the distillery makes its whisky only from 100% malted barley.
