“Single malt finished in three apple casks: calvados, Virginia cider and apple brandy.”
Tasting notes
- nose
- honeysuckle and green pear with apple-cinnamon oatmeal, beeswax, roasted almond and a touch of cedar
- palate
- baked apple and cinnamon toast over honey and soda bread, with ginger and allspice building
- finish
- long; maple brown sugar, orange and cracked black pepper over scorched grain, settling into earthy oak
Mash bill
- Malted barley100%
100% malted barley. The barley is grown and malted in the Midwest, then milled at the distillery on a 1920s Boby mill that splits each kernel into three parts. The apple character in this bottling comes from the finishing casks, not the grain.

Why it's craft
Cider Cask Finish moves the house single malt out of ex-bourbon barrels and into three apple-based casks: calvados casks from France, barrels that held Virginia cider, and Laird's apple brandy barrels. Virginia Distillery Co. makes the malt itself in Lovingston, double distilling it on copper pot stills built in Scotland, and ages it at least four years before the finish. Every whisky the distillery makes starts from the same mash bill of 100% malted barley.
