“Smoke from Washington peat, cut wet from a local bog: mossy and herbal, not medicinal.”
Tasting notes
- nose
- vanilla custard, praline, charred pineapple and buttery croissant
- palate
- toasted sourdough, cedar, baked pear and candied ginger on an oily texture
- finish
- long, with allspice, cedar and milk chocolate; the fruit and smoke fall away first and a herbal note lingers
Mash bill
- Washington peated malt100%
100% Washington peated malt. The barley is grown in the Skagit Valley, about 70 miles north of Seattle, and smoked with peat cut from a bog about two hours south of the city, harvested from below the waterline without draining the bog. That peat holds sphagnum moss and Labrador tea, and Westland's blender describes its smoke as earthy, mossy and sage-like with a wildflower edge, not medicinal.
- Cask
- Second-fill Cooper's Reserve American oak (Westland refill); new American oak
Why it's craft
Solum is Westland's series built on peat dug in Washington instead of imported from Scotland, with barley grown in the Skagit Valley. Edition 3 is the first to age in Westland's own refill casks in place of ex-bourbon barrels, alongside new American oak. Westland, founded in Seattle in 2010 and owned by Rémy Cointreau since 2017, mashes, ferments and distills its single malt at its Seattle distillery.
