Tasting notes
- nose
- Bright stone fruit and fresh-cut apple, with orange peel, cinnamon and a herbal edge over charred oak
- palate
- Soft and oily; vanilla cream and cocoa, then caramel and baked apple, with oak and a faint smoky note at the back
- finish
- Medium-long; caramel and cocoa turning to dark chocolate and oak, with a wisp of smoke as it fades
Mash bill
- Malted barley100%
100% malted barley, unsmoked. Classic is the first recipe Stephen Paul built, modeled on the unpeated single malts of Speyside, before he developed the mesquite-smoked malt behind Dorado. With no smoke on the barley, the malt and the new American oak carry the flavor.
- Cask
- New American white oak, medium char, 15-gallon

Why it's craft
Classic is where Whiskey Del Bac started: Stephen Paul taught himself to floor-malt barley and built this unsmoked recipe on the Speyside model before he ever dried malt over mesquite. It is mashed, fermented, pot-distilled, aged and bottled at the Tucson distillery and never chill-filtered. Paul and his daughter Amanda founded Hamilton Distillers in 2011 to launch the brand, and in 2026 Whiskey Del Bac was acquired by No Sleep Beverage, a spirits portfolio company based in West Palm Beach, Florida.
