Whiskey Del Bac, made by Hamilton Distillers in Tucson, smokes malted barley over velvet mesquite as a Sonoran Desert answer to peat. Its single malts, Dorado among them, are mashed, fermented, distilled in copper pots, aged and bottled on site, and never chill-filtered. Sentinel Rye is the exception: a straight rye distilled in Indiana, then finished in Tucson with Del Bac's mesquited wood and filtered over mesquite charcoal. No Sleep Beverage bought Whiskey Del Bac in a deal announced in April 2026.
