- nose
- stone fruit and cherry cordial over spiced oak, with cinnamon, vanilla and a little pipe tobacco
- palate
- silky; honey and golden raisin lead into graham cracker, black cherry, maple and oatmeal cookie, edged with baking spice
- finish
- medium-long; oak, maple and praline stay on, with a faint wisp of smoke as it fades and leaves the mouth watering

- WhistlePig 10-year rye barrels, four weeks
Why it's craft
WhistlePig released The Béhôlden in 2023 as its first single malt, a Canadian malt whiskey aged 21 years, and calls it the first super-aged North American single malt. The company did not distill it: it bought the aged malt, finished it on its Vermont farm in barrels emptied of its own 10-year rye, and hand bottled each barrel there. The first release came from 18 barrels.
