Why it's craft
Declaration is WhistlePig's limited edition for the 250th anniversary of American independence, and it steps away from the farm's rye to a recipe that is mostly wheat. WhistlePig put together wheat whiskey from its own Vermont stills and whiskey distilled in Indiana, then aged it in a second American oak barrel and finished it in Wave Stave barrels, which the brand says add a gradient of toasted flavor.
