65% Wapsie Valley corn, 17.5% malted barley, 17.5% wheat. Wapsie Valley is an open-pollinated heirloom corn with tall stalks and multi-toned ruby ears, and it carries more protein than the yellow corn most bourbon is made from. Local family farms near Pittsburgh brought the variety back for Wigle, starting in 2014 when Nigel Tudor of Weatherbury Farms offered to grow it.

Why it's craft
Wigle buys this heirloom corn from local family farms that took on an open-pollinated heirloom that is hard to grow. The distillery mills, ferments and pot-distills every grain itself in Pittsburgh's Strip District, where it opened in 2012 as the first distillery in the city since Prohibition. Wigle has been owned since 2022 by Pittsburgh Spirits, a family-owned sister company of Highlands Ventures.
