Tasting notes
- nose
- honey, caramel and toffee with orange zest, dates, almonds, black pepper and seasoned oak, over a light floral note
- palate
- rye spice up front, then maple sugar, caramel, clementine, leather and tobacco with a warm, grainy richness
- finish
- long; caramel and maple sugar take over from the spice, with leather, tobacco and orange zest lingering before cinnamon, clove and oak close it out
Mash bill
- Corn75%
- Rye13%
- Malted barley12%
75% corn, 13% rye, 12% malted barley. Rare Breed uses the house bourbon recipe, whose generous rye share carries spice through the heavy oak of older barrels. Because it is bottled without water, the grain and the barrel come through at full strength rather than diluted.
- Cask
- New charred oak, No. 4 "alligator" char
- Best served
- neat or on the rocks

Why it's craft
Rare Breed shows Wild Turkey's bourbon at barrel strength: a batch of six-, eight- and twelve-year-old barrels bottled with no water added, first released in 1991. Wild Turkey barrels its whiskey at a lower entry proof, so less water goes in before aging and none goes in at bottling. It is distilled, aged and bottled in Lawrenceburg, Kentucky, where the Russell family has run production since Jimmy Russell joined in 1954.
