“A 1960s Thompson Willett brand rebuilt on a rye-heavy marriage of both house bourbon recipes.”
Tasting notes
- nose
- caramel and vanilla custard, red berries, lemon and tart green apple, over seasoned oak
- palate
- oily; plum, cranberry and black cherry, then honey, milk chocolate, almond and cinnamon with dry oak
- finish
- warming spice rises and turns to cinnamon and baked red apple, then mint, pine and tobacco leaf linger as dry oak settles in
Mash bill
A blend of several whiskeys, so no single grain split.
A blend of two recipes: 65% from a mash of 72% corn, 13% rye and 15% malted barley, and 35% from a mash of 52% corn, 38% rye and 10% malted barley. The first is the Willett family's original low-rye bourbon recipe; the second is its high-rye recipe, and its 38% rye is what pushes this bottle toward spice. Both are mashed, fermented and distilled at Willett and barreled separately.
- Cask
- New charred American oak, char #4
- Best served
- neat, with a little water, or in a whiskey-forward cocktail
Why it's craft
Thompson Willett, who founded the distillery in 1936, created Johnny Drum in the 1960s for a West Coast partner. For years the label held bourbon bought from other distilleries; the current Private Stock is distilled, aged and bottled by Willett, which restarted its own stills in 2012. Unusually, it marries Willett's two bourbon recipes, aging each apart before they meet in the batch.
