“Willett's wheated bourbon in a decanter cast as a copy of the distillery's own copper pot still.”
Tasting notes
- nose
- vanilla bean, rose water and caramel, with puff pastry, whipped cream and a faint note of poached pear
- palate
- creamy; cornbread, honeyed black tea, jasmine and lemon-poppyseed cake, with light cinnamon and licorice
- finish
- soft and quick; semi-sweet floral notes and cane sugar fade out on a trace of coffee
Mash bill
- Corn65%
- Wheat20%
- Malted barley15%
65% corn, 20% wheat, 15% malted barley. This is Willett's wheated recipe: wheat stands in for rye as the flavoring grain, which keeps spice low and leaves a softer, sweeter, more floral spirit. Pot Still Reserve moved to this recipe around 2021 to 2022; earlier bottlings used a rye recipe.
- Cask
- New charred American oak, char #4
Why it's craft
The bottle is an exact replica of the patented pot still Vendome Copper and Brass built for Willett, and the whiskey inside is now Willett's own: distilled, aged and bottled at the Bardstown distillery the family founded in 1936. When Pot Still Reserve launched in 2008 it held bourbon bought from another distillery; it has since moved to Willett distillate and, around 2022, to the house wheated recipe. The family still owns and runs the distillery.
