nose
crème brûlée and cherry compote, toasted coconut, powdered sugar, green apple and a hint of raspberry
palate
crème caramel and toffee with vanilla, candied ginger, cherry, honey and milk chocolate over light leather
finish
medium-long; honeysuckle and ginger give way to dark chocolate and espresso, with orange rind, baking spice and white pepper drying it out

Mash bill

Full grain split not published.

Corn, malted barley and either wheat or rye; Wyoming Whiskey has not published which of its two bourbon recipes this bottle uses. The house wheated recipe is 68% corn, 20% winter wheat and 12% malted barley, and its rye recipe is 68% corn, 20% winter rye and 12% malted barley. The grain is non-GMO and grown in Wyoming by the Rageth family in Byron, who have worked with the distillery since it began to choose varieties for their starch and sugar.

Cask
New charred American oak

Why it's craft

Wyoming Whiskey makes everything it sells at its distillery in Kirby, the first legal distillery in the state, from grain grown in Byron and water from a limestone aquifer. Its National Parks series pairs each release with a park foundation. This fourth edition, made with Yellowstone Forever, honors Mammoth Hot Springs and the photographer F. Jay Haynes, whose pictures of Yellowstone became its best-known postcards.
