The Souza family has farmed sweet potatoes and rye in California's Central Valley since 1917, and the distillery is run by the fifth generation. David Souza taught himself to distill and began with a sweet potato vodka. The distillery is named for his son, Corbin Cash Souza. It makes rye whiskey, which is its best seller, along with a blended whiskey, a dry gin and a sweet potato liqueur. The business struggled for distribution until California allowed distillery tasting rooms in 2017, and it grew from there.
