Oak & Grist was founded in 2015 in Black Mountain, North Carolina, and opened in 2017. Head distiller William Goldberg and co-founders Russell Dodson and Robert Goldberg set out to make American single malt with Scottish technique and Appalachian grain. Barley is malted nearby at Riverbend Malt House, then brewed, fermented, distilled and aged on site. Edwin Dodson's grounding in the Scottish tradition shaped a house style that leans toward Speyside orchard fruit. Its single malts include Descendent and Origin.
