David Perkins founded High West in 2006 as Utah's first legal distillery since Prohibition. It built a national name for rye by blending sourced Midwestern rye with its own pot-still rye, using more of its own spirit as it matured. Double Rye and Rendezvous Rye are its best-known blends. The Wanship distillery in the mountains and the Park City saloon draw visitors. Constellation Brands bought High West in late 2016.
